Short answer
As often as you would be willing to redo the work. A site you post to weekly needs weekly backups; a shop taking orders needs daily ones. Keep several generations, not just the most recent.
Keeping only one backup is a common trap: if a problem goes unnoticed for a few days, the single backup you hold already contains it.
